01Crank the oven as hot as it goes (250–300°C) and preheat a tray or steel for 30 minutes.
02Top it lightly — torn fior di latte, a few basil leaves, a drizzle of oil. Less is more.
03Bake 6–9 min, finish under the grill for leopard char. Rest 60s, then dig in.
